Produced by the prestigious winemaker Mariano García, Aalto PS is made from a selection of the best Tinto Fino (Tempranillo) grapes coming from 80 to 100 year-old vineyards located in the province of Burgos.
VINIFICATION
Hand-harvested and transported to the winery in very small boxes during hours of low light to prevent pre-fermentation, the grapes were put through another selection process at the winery before being destemmed. The grape musts from each vineyardwere separately vinified prior to making the final blend. The fermentation of this Spanish red wine from Aalto Bodegas y Viñedos was carried out at a controlled temperature. Then Aalto PS 2019 was drawn off and transferred into new French oak barrels, where it completed malolactic fermentation and was aged for a period of 21 months.
