VINIFICATION
An elegant organic cava, crafted following the Traditional Method and aged on lees for a minimum of 35 months. Bearing the seal of Elaborador Integral (Integral Producer), this cava embodies the uniqueness of our sandy granite ‘sauló’ soils and the Mediterranean freshness of our landscape. After a gentle pressing of the grapes to extract the free-run must, each of the varieties comprising Alta Alella Mirgin Reserva ferments separately. This is followed by a second bottle fermentation using the traditional champenoise method and aging for at least 30 months. It is released immediately after disgorging, with the disgorging date on the label.
TASTING NOTE
A fresh and expressive sparkling wine. After light pressing of the grapes, each of the varieties ferments separately. This is followed by a second bottle fermentation using the traditional Champenoise method and an ageing of at least 38 months. Pale yellow colour, fine bubbles. On the nose floral, white fruits (pear, green apple) and fresh almonds, mixed with subtle hazelnut notes. Fresh and light in the mouth, well-integrated effervescence.
FOOD PAIRING
The Alta Alella Mirgin Brut Nature Reserva pairs perfectly with Mediterranean cuisine, especially seafood such as oysters and shrimp. It’s also a brilliant choice with tapas, light fish dishes, Iberian Jamón, and paella.
