VINIFICATION
An organic rosé cava, crafted with the Traditional Method and aged on lees for a minimum of 35 months. A gentle skin maceration gives the wine its delicate color. Bearing the seal of Elaborador Integral (Integral Producer), it is made from vines rooted in ‘sauló’, a sandy granitic soil, overlooking the Mediterranean Sea. Mataró is the most genuine variety in Alella and it is also the name of the Capital of the Maresme area. Return to the origins, to the first variety used to make sparkling wines in Catalonia: la Monastrell. This grape, hand-harvested at the optimal ripening point, yields a base wine that ages beautifully. A light film maceration allows for the light pink color and red fruit aromas. The training is evident in the pastry notes, which a well-integrated bubble carries to a delicate aftertaste. Sandy loam, 15 months of aging.
TASTING NOTE
Go back to the origins, to the first variety used to make sparkling wines in Catalonia: la Monastrell. The grapes, harvested by hand at the optimal time of ripening, enable the production of a noble, aging base wine. A light film maceration allows for the light pink color and red fruit aromas. The upbringing is noticeable in the pastry notes, which transport a very well integrated bubble to a delicate aftertaste. Sandy loam, 15 month maturation period.
