Baltasar Gracián Viñas Viejas is the Spanish version of that Las Rocas de San Alejandro that put Bodegas San Alejandro on the radar of so many wine enthusiasts in the world, when Robert Parker gave a humble Grenache of Calatayud 90 points. Since then, and it has already rained, it is one of the wines with the best CPR in our country.
VINIFICATION
High altitude vineyards, different orientations and exceptional slate and gravel soils, which, together with the antiquity of its traditional, bush vines, produce grapes harvests of exceptional quality. Selection of Garnacha plots over 60 years old, from vineyards located in the hills of the Sierra Santa Cruz with quartzite and slate soils. Destemmed and uncrushed grapes macerate for a month alternating delicate pumping-overs and pigeages. It ages for 12 months in French foudres and vats of 50hl for a better balance and conservation of the Garnacha aromas.
TASTING NOTE
Picota cherry red colour. Aromas of blackberries, plums, figs and thyme that bring you to the old mountain vineyards of Garnacha. A subtle touch of oak with balsamic and mineral aromas. Savoury and silky in the mouth with an intense concentration of fruit and a long balanced aftertaste.
FOOD PAIRING
Pairs well with robust meats like lamb or roast veal, especially when prepared with sauces or herbs. It also complements stews, game birds, grilled meats, and mushroom dishes.
