Looking for a small size wine that let us remove the basic “noise” that comes from going through the machinery of a cellar. Allowing an aerial feeling to the wine despite the powerful expression of grape, thanks to gentleness in vineyards and cellar. Blunt is the idea, the possibility of creating a kind of wine from a different view, from freedom, proposing an expression of what already exists in nature, rather than exalting the creator’s ego. That is, more full of humility than protocol.
VINIFICATION
Manual harvesting in boxes. Grape harvest cooled down to 4C. Manual and selection of vegetable remains to fulfill directly the 3001 barrels without base, where it ferments. Manual pigeage with no temperature control. Pressed dry without pumps or pressing. Barrel filling in the Burgundy way. 15 months.
TASTING NOTE
Aromas of fresh red forest fruits, a hint of red peppers with an envilvent of pine forestry. Very nice balsamics. In mouth, volume.
FOOD PAIRING
Cuts of lamb, beef, or pork. Roast veal or pork encrusted with black olive tapenade and capers provides an ideal accompaniment. Duck breast, prepared with a refined blackberry or cherry sauce offers another superb pairing. Venison, wild boar or a thick herb encrusted lamb chop, accompanied by a mushroom risotto, provides yet another sophisticated companion. Delicious Jamón Ibérico paired with a spicy bean or lentil dish.
