It’s a dry white wine made from 100% Merseguera grapes by the Spanish producer Baldovar 923. The grapes come from high-altitude, 20-80 year-old vines in Valencia.
VINIFICATION
The grapes come from high-altitude (900-1,200 meters) and chalky limestone and sandy schists, 20-80 year-old vines in Valencia. The wine is made with minimal intervention, spontaneous fermentation and resting on the fine lees for 9 months while aging in Stainless Steel (90%) and 500L French Oak (10%). Bottled unfined and unfiltered.
