His great love for the sweet but also the forbidden fruits made Smith, a colonial goods and delicatessen merchant, travel year after year to his place of longing in Alicante, the city of Yecla. The dry heat, the merciless sun increased his desire for Maria Dolores, the daughter of his old business partner Aurelio Garcia immeasurably. Even today, three wines in the Garcias’ repertoire recall this passionate romance and the three daughters, so extraordinary, so beautiful.
VINIFICATION
Selective harvest by hand. Fermentation in steel tank. The soils are predominantly limestone, clay and some sand. High temperature differences between day and night preserve a juicy fruit and elegance at high maturity even in a continental climate with long, dry and hot summers.
TASTING NOTE
On the palate is this beautiful, juicy and light dark fruit, with a slightly bitter tannins, true pleasurable lightness.
FOOD PAIRING
Cuts of lamb, beef, or pork. Roast veal or pork encrusted with black olive tapenade and capers provides an ideal accompaniment.
