Dominio do Bibei is one of the shining stars of the Iberian Peninsula, impressively demonstrating how ingeniously one can revive ancient traditions while simultaneously adhering to all the rules of modern viticulture. The mere fact that ancient terraced vineyards have been restored here is remarkable. The strict use of indigenous grape varieties and biodynamic cultivation also point the way to the future of viticulture.
VINIFICATION
Red wine aged in wood. Respectful agriculture. 20 months in used French oak barrels. 90% Mencía, 10% Garnacha. From granitic soils at 200-700 meters above sea level and cultivated using respectful agriculture. In the winery, the grapes ferment at a controlled temperature, and then the wine ages on lees for 20 months in used French oak barrels. Finally, it remains in the bottle for a minimum of 18 months before being released.
TASTING NOTE
A bouquet of vibrant aromas like fresh cherries, and blackberries, with delicate hints of cocoa. Upon tasting. A ripe fruit bouquet on the nose. This red wine is a true embodiment of its terroir.

It goes perfectly with smoked meats, red meats, stews and traditional casseroles, as it combines fruity and spicy aromas with ripe fruit, cocoa and toast, as well as fresh acidity and soft tannins.
