This elegant, versatile sparkling wine is born in the vineyards of Penedès, which are worked by the members of Aliances per la Terra. Launched by Gramona in 2015, this is a group of winemaking families who work their land biodynamically.
VINIFICATION
The four varieties are vinified separately to ensure that each one contributes the maximum potential to the base wine. Gramona Imperial, which was started by the third generation of the family, is the expression of the art of coupage. In addition to the different personality of each grape variety, the characteristics of each plot are added: obtaining the perfect blend year after year is an exercise in mastery that draws directly from the artisan tradition. Once the coupage has been achieved, the bottles are filled for the second fermentation. After each bottle is disgorged, a dosage is carried out using the centuries-old solera family recipe, which provides the elegant characteristic notes.
TASTING NOTE
It has a pale yellow colour with straw-coloured hints. Its aromas include ripe white fruit, such as apple, and a floral touch. There are citrus notes of lemon peel and aniseed notes of fennel. It brings back memories of wheat, butter and brioche. After a while in the glass, ripe aromas of apple pie and marzipan appear. On the palate, the creaminess is the protagonist along with the very fine bubbles and a particularly well-balanced freshness. It is full-bodied and lively at the same time. Aromas of baked apple and pastries return, with hints of toasted nuts, toffee and old book.
FOOD PAIRING
It is elegant, versatile, creamy and seductive. A great gastronomic wine to accompany Iberian ham, white meats and roasted vegetables: its toast embraces the aromas of Gramona Imperial in an elegant way.
