Manuel D’Amaro Albariño sobre lías is a 100% Albariño wine made with grapes from a single plot. Its exclusivity is embodied in the figure of Manuel d’Amaro. Señorío de Rubiós, founded in 2003, is a unique winery within the Rías Baixas Designation of Origin.
VINIFICATION
After the harvest, the bunches are destemmed and, after cooling, the grapes are sent to the press. The resulting must is cleaned by racking and subsequently fermented at 16°C for 15 to 20 days. After fermentation, it is racked along with its fine lees. The lees are then stirred with nitrogen for five months to keep them suspended in the wine. It is then racked again to separate the wine from the lees. A few months later, it is stabilized and filtered before bottling.
