Protocolo is a red wine from D.O La Rioja produced by the Dominio de Eguren winery. This is a single variety wine made exclusively with Tempranillo grapes. Dominio de Eguren is a winery that not only was founded but has remained in the hands of the Eguren family for four generations. The grapes used to produce this wine come from 15 different vineyards owned by the winery that are located across La Rioja.
VINIFICATION
The grapes used for Protocolo come from the town of Páganos, in the province of álava, in vineyards that are home to calcareous clay soils. The vineyards are old with low yields, which allows for a higher concentration in flavour than usual. The harvest is carried out manually, seeking to preserve the characteristics of the grapes on their journey to the winery. The winemaking process begins with cold maceration, which lasts for one day. Following this, fermentation is carried out with two daily pump overs. Following this, post fermentative maceration takes place for 8 days, a gentle extraction, with one light pump-over daily.
TASTING NOTE
Intense cherry red colour with ruby reflections. Nose: mineral aromas combined with red and black fruits. Palate: fruity, kind and with sweet tannins.
