Produced only in excellent years from the best old vines from eight villages around Haro and with selection of only 1 or 2 vats after separate fermentation of the plots.
VINIFICATION
The rainfall in September favoured the ripening process. This harvest is classified Very Good by the D. O. Rioja’s Regulatory Council. These processes are carried out in small French oak vats at controlled temperatures so as to maximise the extraction of aroma and colour. After this, malolactic fermentation is performed without filtering, with only the movement of the lees using batonnage. Ageing lasts 19 months in new French oak barrels.
