Rodriguez Sanzo Bajo Velo is a complex, characterful white wine from Spain’s Rueda DO region, made from the Verdejo grape and aged in used sherry barrels that once held sherry with a biological veil, imparting a mineral-saline character.
VINIFICATION
The wine is crafted from 100% Verdejo grapes from vineyards at 900 meters elevation in Segovia. A portion of the wine undergoes biological aging for at least 10 months in traditional sherry casks that previously contained biologically aged sherry. The casks are not washed after the sherry is removed, allowing them to retain the unique “veil” of sherry yeast, which integrates into the Verdejo. This biological aging process contributes to the wine’s distinctive mineral-saline character and influences its texture and aromatic profile.
