Can Ràfols dels Caus is without a doubt one of the most dynamic wineries in the Penedès region. Carlos
Estevan took over the estate in the 1970s and has since steadily expanded it to its current 50 hectares and
countless native and exotic grape varieties. From his almost unmanageable wine kingdom with mostly very
small plots, Carlos conjures up fantastic and independent wines year after year. Lively and vibrant wines,
dervishes and belly dancing, wild herbs, and juicy fruits, and always a lot of chalky minerality.
VINIFICATION
Made from hand-picked Xarel·lo, grown on old vines and Riesling. Traditional fermentation without the
addition of selected yeasts, with part of the Xarel·lo fermented in large chestnut barrels.
TASTING NOTE
Colour: straw yellow. Aroma: fresh white-fleshed fruit with hints of aromatic herbs and smokiness. Taste:
expresses the complexity and minerality of this unique terroir. The Xarel·lo provides the backbone and
roundness of the wine, whereas the Riesling provides the elegance and depth.
FOOD PAIRING
Chargrilled vegetables, white fish, risottos, creamy rice dishes, goes fantastically well with oriental cooking.
