Young, hungry and ready for new meets experienced and open: Doctoral student (architecture) Alejandro Muchada meets the prestigious champagne producer David Léclapart at the 2011 harvest – chalk soil here, chalk soil in southern Spain. VINIFICATION
Muchada-Léclapart Univers is a white wine aged on lees made with the Palomino variety according to biodynamic principles by Muchada-Léclapart in Cádiz (Andalusia). Muchada-Léclapart was set up by two biodynamic viticulture enthusiasts. It all started when Alejandro Muchada, a student architect, crossed paths with expert vigneron David Léclapart during his first vintage. They made their first forays into the world of wine together and then set up their own winery in Marco de Jerez (Cádiz). Muchada-Léclapart Univers comes from a mixture of the youngest vines planted on 3 hectares of albarizo soils. They use artisan agriculture, following biodynamic principles like animal traction, the use of a green cover and maintaining the natural balance of the soil and the vine with homeopathic preparations. The harvest is carried out manually at the optimum point of ripeness. In the winery, they are committed to minimal intervention. To do this, the Muchada-Léclapart Univers grapes are pressed, and only 3g / hl of sulphur is then added. The must then ferments spontaneously with native yeasts in a solid steel tank covered with interior ceramic paint. No cooling equipment is used. Before bottling, the wine is not clarified or filtered. Muchada-Léclapart Univers is an unusual white that breaks all the rules of Marco de Jerez. An unusual, intense, long and very salty wine.
TASTING NOTE
Muchada-Léclapart Univers 2018 is a profiled white wine with complex fruit aromas and subtle yeast notes. On the palate it is surprising, long, intense and elegant with a delicious saline finish.
