The winery, with 1.73 hectares of its own vineyards, is located in a small town in southern Galicia, Souto (Castrelo de Mino, Ourense). Long family tradition, passed down generation after generation, dedicated to viticulture since 1840. After six generations, José Manuel Blanco inherited the winery and in 2002 decided to stop selling his grapes and begin producing and bottling his own wine. All the wines are made with grapes from their own production, where a single person, the winery owner Jose Manuel Blanco, is responsible for the entire process, from tending the vineyard to winemaking and bottling.
VINIFICATION
It comes from vineyards between 25 and 40 years old on granite and slate soils. The wine is pressed using an old traditional press from the area. Vinification is carried out with native yeast and takes place in steel vats, where it also undergoes a brief aging on its lees for six months.
