Venus La Universal is the winery of Sara Pérez and René Barbier. Trained in the respective family wineries of Priorat (Clos Martinet and Clos Mogador), in 1999 they decided to start this professional and vital project in Montsant. La Universal is the small 4-hectare plot where the wines of Sara and René are born from. Through organic agriculture, with maximum respect for the environment, optimising energy and resources in all the production processes, they make wines with great character, faithful to the terroir where they come from.
VINIFICATION
Venus La Universal is a wine made from Carignan, Grenache and Syrah from a vineyard located at the top of a hillside with both orientations, north and south. The soils are clayey-calcareous, deep and humid. Harvest is performed by hand. All the varieties ferment together, if the vintage allows it. Whole grapes and some stems from the Grenache. It is fermented with wild yeasts, and with a slight pigeage (submerging the cap). The maceration is carried out for 28-32 days in wooden vats and 500-litre open barrels. The ageing takes place for 20 months in 4000-litre wooden vats, and one part in 300-litre barrels.
TASTING NOTE
Venus “La Universal” 2015 is a concentrated red wine with fruity aromas of ripe black fruit, spicy notes and mineral touches. On the palate it has a great balance of fruit, freshness and body.
