Victorino is a great Toro wine produced by the winery Teso La Monja. Thanks to the Eguren family, Teso La Monja has become one of the reference wineries within the D.O. Toro due to the detailed knowledge of the land, the environmentally-friendly agriculture applied and the great wines produced.
VINIFICATION
Victorino is made of Tinta de Toro grapes from old vines of over 45 years old. The agriculture applied is based on the sustainable agriculture principles, with natural fertilisers, without using pesticides and with the less intervention possible towards the land. The grape harvest is conducted manually. The selection is also manual and is carried out by means of a double-belt conveyor. The production is completely handicraft, destemming the grapes with treadings and slight pump-overs during the fermentation, which is carried out at a controlled temperature of 28ºC for 8 days. The ageing takes place in new French oak barrels for 18 months, being racked every four months.
TASTING NOTE
The climate year in Toro was the same as its close neighbors in Ribera de Duero: hot and dry. With one big exception: they didn’t suffer the tragic frost of April 28th. The spring began with high temperatures resulting in early budding, and later a sudden drop in temperatures caused the slowdown of the growth cycle again. The late spring and early summer suffered high temperatures that advanced the cycle. In late July and August, temperatures eased up and some precipitation ensured the water reserves until the end of the harvest, improving acidity and giving fruitiness to the wine.
