Villa Conchi is named after the mother of the winery’s founder, Javier Ruiz de Galarreta. Javier, originally from Rioja Alavesa, founded a company in the 1990s focused on exporting premium wines from Spain. He spent a long time searching for a suitable bodega in the heart of the historic Cava region in the Catalan Alt Penedès and finally found one. Tragically, Conchi passed away in July 2009 and was never able to taste the sparkling wine dedicated to her.
VINIFICATION
The grapes are fermented in steel tanks and bottled. The wine undergoes a second fermentation in the bottle and then rests horizontally on the fine lees for at least twelve months. All grapes come from Penedès, the region of origin of Cava.
TASTING NOTE
Brilliant pink. On the nose, aromas of grapefruit, strawberries, ripe apples, and roasted almonds are evident. Nuances of brioche and floral notes are also detectable. On the palate, it offers fresh acidity, fine perlage, and a persistent, aromatic finish.
FOOD PAIRING
Pairs well with tapas, Manchego cheese, fresh large shrimp cocktail.
